On the rockyterritoryof Causse Mejean, plants, grassand bushes are the main sources of the ewesdiet, providingtheirmilksucha unique taste. The production of the Brebis sangléistotallyhandmade, whichispermettedby a real know-how of ourproducer. This soft cheeseismade of ewes' rawmilk. Itsclaycoloreddrindmatches wellwithSpruce's strapfromJura. Moreover, itsoblong shapegivesitan additionaloriginality. The soft texture issmoothyand generouswitha niceivorycolor. The spruce'sstrapsurrounds, protectsand givesa slightlywoodyflavorto the cheesethatis meltingwiththe ewes' milkflavor.

History:
This smallproduceristakingcare of 11 folks and 25000 Lacaune'sbreedewesand involveshimselffor the transhumance tradition to last on thisarea of 33000 Hectares in SouthernLozère. On the causse Mejean, the responsibleapproachto farmingpermettedto maintaina traditionalmountain farming, withrespect for animals, but alsofor all parties, fromsheeperdto cheesemaker. The land ispoor, water sources are rare, thereisno rivers, onlylavognes(wallows) but thereisa richflora withmore than15 endemicspecies.
